Carolea Olive (Sicilian)
It is a variety widespread throughout southern Italy, mostly in Sicily, particularly in the areas of Nisseno (Caltanissetta), Palermo, Agrigento and Messina.
This olive, with its unique taste, has a yield on oil of 20-25% and is considered a high quality olive. The Sicilian IGP extra virgin olive oil produced has an intense fruitiness, with hints of green apple, almond and artichoke. It has a bitter taste on the palate, accompanied by a spicy aftertaste. Its color is greenish with golden yellow reflections.
